Thanks to everyone who stopped by Saturday afternoon to sample burgers, chili and hamburger soup. It’s always fun to get out and meet our customers. Here are the recipes that many of you asked for…
Hamburger Soup
Most of us don’t think of ground beef as a soup ingredient but if you try this soup odds are good you’ll make it often.
Ingredients
Ground Beef – 2 pounds
Fresh Onion – 1 large chopped
Fresh Celery – 4 stalks chopped
Fresh Carrots – 5 large chopped
Bay Leaves – 2 leaves
Salt & Pepper- to taste
Pearled Barley – 8 tablespoons
Beef Broth – 2 quarts (Vegetable Broth can be substituted.)
Chunky Tomato Bisque Soup – 1- 10 ounce can
Canned Diced Tomatoes – 1 – 28 ounce can
Medium Chunky Salsa -1 cup
Instructions
Brown and Crumble the beef, add the onions and cook until they are translucent
Put all of the ingredients in the pot and simmer for 1 to 2 hours (until the carrots are done) and take out the bay leaves.
Yield
About 8 quarts of soup. The soup freezes well so you can freeze any extra soup or halve the recipe.
Quick Chili
This is a favorite at our house. It’s quick, easy and good. There’s not a lot of heat but it has pleasant kick.
Ingredients
Ground Beef- 2 pounds
Fresh Onion- 1 large
Fresh Garlic – 3 cloves
Crushed Red Pepper Flakes – sprinkle to taste
Chili Powder – 1- 2.5 ounce jar
Salt & Pepper – to taste
Tomato & Basil Sauce – 1 or 2 – 24 ounce jars ( I like marinara sauce. Use 1 jar for thicker chili and 2 jars if you want juicier chili with crackers.)
Canned Diced Tomatoes – 2 10-14 ounce cans
Instructions
Brown and crumble the ground beef
Add the onion and cook until the onion is translucent
Stir in the garlic and wait 1 minute
Add the other ingredients and simmer for about an hour
Yield
About 4 quarts of chili (We usually make half of the recipe when it’s just the two of us at home. If you are feeding a larger group, size it up.)
